Turkey Chili

40g Protein, 18g Carbs, 20g Fat, 400kCal


Ingredients:

  • 1 tsp olive oil
  • 1 large bell pepper
  • 1 jalapeno pepper
  • 2 scallions diced, separate the white and green parts
  • 1/4 tsp salt
  • 2 cloves of garlic
  • 1.5 lbs 95-97% lean turkey ground
  • 1 (28oz) can diced fire-roasted tomatoes
  • 2 tsp chili powder
  • 2 tsp cumin powder
  • 4 oz avocado
  • 2 oz reduced fat shredded cheddar cheese

Directions:

  1. Heat oil in a large pot over medium heat. Add the white parts of the scallions, bell pepper & jalapeno peppers and salt. Cook for 3 minutes. Add in the garlic & cook until minute.
  2. Add in the turkey and cook until it is cooked through
  3. Add tomatoes, cumin & chili powder stirring to combine all together
  4. Cover & simmer on low for 10-15 mins
  5. Serve in bowls and top each one with 1oz avocado & 1/2 oz cheese. Sprinkle green parts of scallions on top to finish.
