Balsamic Chicken & Veggies
Servings: 4 Calories: 350 Fat: 11g Carbs 10g Protein: 50g
Ingredients:
- 4 Oz Skinless Chicken Breast
- 1/4 Tsp Salt
- 1/4 Tsp Ground Black Pepper
- 4 Roma Tomatoes Cut In 4ths
- 12 Medium Button Mushrooms
- 2 Cups Broccoli Florets
- 1 Tbsp Olive Oil
- 2 Garlic Cloves, Minced
- 1 Tsp Dried Oregano
- 3.5 Tbsp Balsamic Vinegar
- 1 Tsp Extra Virgin Olive Oil
Directions:
- Preheat Oven to 375 Deg F
- Line a baking sheet with parchment paper
- Season chicken breasts with salt and pepper and place on baking sheet
- Toss veggies with olive oil and lay on baking sheet in one layer
- Cook for 20-25 mins or until Chicken reaches 165 deg F
- While that cools mix together the garlic, oregano, balsamic vinegar, and extra virgin olive oil
- Each serving is 6oz Chicken, 4 tomato quarters, 3 mushrooms and 1/2 cup of broccoli.
- Drizzle with one Tbsp of the dressing over the top
- Enjoy!
