Balsamic Chicken & Veggies

Ingredients: 

  • 4 Oz Skinless Chicken Breast
  • 1/4 Tsp Salt
  • 1/4 Tsp Ground Black Pepper
  • 4 Roma Tomatoes Cut In 4ths
  • 12 Medium Button Mushrooms
  • 2 Cups Broccoli Florets
  • 1 Tbsp Olive Oil
  • 2 Garlic Cloves, Minced
  • 1 Tsp Dried Oregano
  • 3.5 Tbsp Balsamic Vinegar
  • 1 Tsp Extra Virgin Olive Oil

Directions: 

  • Preheat Oven to 375 Deg F
  • Line a baking sheet with parchment paper
  • Season chicken breasts with salt and pepper and place on baking sheet
  • Toss veggies with olive oil and lay on baking sheet in one layer
  • Cook for 20-25 mins or until Chicken reaches 165 deg F
  • While that cools mix together the garlic, oregano, balsamic vinegar, and extra virgin olive oil
  • Each serving is 6oz Chicken, 4 tomato quarters, 3 mushrooms and 1/2 cup of broccoli. 
  • Drizzle with one Tbsp of the dressing over the top
  • Enjoy!
