Cauliflower Grilled Cheese
Serves 4
31g Protein, 10g Carbs, 20g Fat, 340 Kcal
Ingredients:
- 6 cups cauliflower riced
- 3 eggs
- 2 tbsp grated parmesan cheese
- 12 oz sliced cheddar cheese
- 1/4 tsp salt
Directions:
- Preheat the oven to 425 deg F
- Lay cauliflower on a parchment paper on a baking sheet & cook for 30 mins until golden brown. Remove and allow it to cool.
- Reduce the heat to 400 deg F
- Squeeze the excess water from the cauliflower and then combine it with the eggs, parmesan & salt.
- Make bread slices with the cauliflower mix using 1/3 for each slice. They should be about 1/4 inch thick. You want a total of 8 slices of cauliflower bread.
- Bake at 400 deg F for about 8 mins
- Remove and top 4 of the slices with 3oz of sliced cheese adding the other slice of cauliflower bread on top to make the sandwich.
- Return to the oven and cook until the cheese is melted.
