Cauliflower Grilled Cheese

 


Serves 4
31g Protein, 10g Carbs, 20g Fat, 340 Kcal


Ingredients:
  • 6 cups cauliflower riced
  • 3 eggs
  • 2 tbsp grated parmesan cheese
  • 12 oz sliced cheddar cheese
  • 1/4 tsp salt
Directions:

  1. Preheat the oven to 425 deg F
  2. Lay cauliflower on a parchment paper on a baking sheet & cook for 30 mins until golden brown. Remove and allow it to cool.
  3. Reduce the heat to 400 deg F
  4. Squeeze the excess water from the cauliflower and then combine it with the eggs, parmesan & salt.
  5. Make bread slices with the cauliflower mix using 1/3 for each slice. They should be about 1/4 inch thick. You want a total of 8 slices of cauliflower bread.
  6. Bake at 400 deg F for about 8 mins
  7. Remove and top 4 of the slices with 3oz of sliced cheese adding the other slice of cauliflower bread on top to make the sandwich.
  8. Return to the oven and cook until the cheese is melted.
  9. Enjoy!
